Complete vs incomplete protein: does 'combining' actually matter?

The rule that vegetarians must combine rice and beans at every meal has been quietly overturned — but the underlying idea, protein quality, is real and measurable. Here's what a protein's amino-acid profile actually tells you, and when it matters.

For decades vegetarians were taught they had to 'complete' their proteins at every meal — rice with beans, hummus with pita — or risk falling short on amino acids. That specific rule has been walked back, but in the backlash a genuinely useful concept often gets thrown out with it: protein quality is real, it is measurable, and for some people it matters.

What makes a protein 'complete'

Your body needs nine essential amino acids it cannot make itself. A 'complete' protein supplies all nine in proportions matching human requirements; an 'incomplete' one is low in at least one — its 'limiting' amino acid. Most animal proteins are complete; many single plant proteins are limited in one (grains tend to be low in lysine, legumes low in the sulphur amino acid methionine), which is exactly why grains and legumes complement each other so neatly.

The myth was that you must combine proteins at every single meal. The truth is you must eat a variety across the day — a much easier bar to clear.

Why per-meal combining is a myth, but variety isn't

The body maintains a pool of free amino acids and can combine proteins eaten hours apart, so the rigid per-meal pairing rule was overstated (a point the American Dietetic Association has made explicitly). What still holds is that eating a VARIETY of protein sources across the day matters for people relying heavily on plants — and that quality is measured. Modern scoring uses DIAAS (Digestible Indigestible Amino Acid Score), which largely replaced the older PDCAAS; animal and soy proteins score high, most single plant proteins lower.

Forget the stopwatch on combining proteins within a single meal — that rule was never necessary. Do make sure a plant-forward diet draws protein from several sources across the day: legumes, grains, soy, nuts and seeds. Variety, not meal-by-meal engineering, is what keeps protein quality high.
